This spicy root vegetable soup ticks all the boxes – healthy, tasty and filling

Serves four to six


Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 tablespoon garlic, crushed
  • 3 to 4 cups vegetables stock
  • 1 cup low fat milk
  • 1 to 2 sticks celery, diced
  • 2 sweet potatoes, diced
  • 1 small butternut, diced
  • ¾ cup parsnips, diced
  • 2 carrots, diced
  • 1 cup turnips, diced
  • ½ teaspoon fresh ginger, minced
  • ½ teaspoon cumin
  • ¼ teaspoon curry powder
  • ¼ teaspoon cinnamon
  • 1 small pinch cayenne pepper
  • 2 bay leaves
  • Pinch salt and black pepper
  • Coriander leaves and plain yogurt (for garnish)


Method
  • Heat the oil in a large pot over medium-high heat
  • Add the onions and sauté until soft
  • Add the garlic and sauté for about 1 more minute
  • Add the remaining vegetables and spices and sauté for another 2 minutes
  • Add the stock and simmer for about 40 minutes until the vegetables are tender
  • Blitz the soup with a blender or food processor until smooth and stir in the milk
  • Season to taste
  • Garnish with coriander leaves, and serve hot
